Roasted Root Vegetables with Honey
1 large sweet potato
2 large regular potatoes
6 shallots
3 large carrots
3 tbsp honey
3 tbsp olive oil
salt to taste
Cut potatoes & carrots
into bite sized pieces. Quarter the shallots. Combine honey & olive oil in
a small bowl & then pour over the vegetables tossing to coat. Spread out on
a baking sheet. Bake in a preheated 400 F until golden brown about 30
minutes. Serve immediately. Serves 4 to 6.
