Chicken
Curry
A good, easy recipe. Kick
it up if you want with a bit more curry and garlic if you like!
2 Tbsp Olive Oil
1 Tbsp crushed Cumin
3 (or more) Garlic cloves, finely chopped
1/3 cup Onion, finely chopped
1 can Tomatoes (16 oz) *
2 Tbsp Curry Powder
1 Tsp Turmeric
2 Tbsp Water
¼ cup chopped fresh cilantro
6 boneless/skinless Chicken Breast cut into 1 inch pieces
2 cups cooked Rice
Heat Olive oil in a large
skillet over medium heat. Add cumin & stir until fragrant. Add garlic &
onions. Cook 2 minutes. Stir in tomatoes. Allow to simmer about 5 minutes.
In a small bowl, combine
curry, turmeric & water to form a paste. Add the paste into the simmering
mixture. Add chicken to coat. Reduce heat & simmer for about 20 minutes.
Salt & pepper to taste.
Stir in rice & cilantro.
Serve hot. Serves up to 6 to 8 people.
* use prepared salsa for
an extra spice up.
For added taste & texture add ½ cup roasted cashews or peanuts.
Prep to table in about 45
minutes.
