Family’s Favorite Split Pea Soup

So easy, it’s perfect when it’s cold outside. 

1 lb dry split peas
2 qt. water
1 meaty ham bone
Salt to taste (1 to 2 teaspoons)
10 whole peppercorns or ½ teaspoon ground pepper
3 tbsp dry celery flakes
1 small or medium onion finely chopped
3 baby carrots finely shredded
1 bay leaf

Soak dried peas for at least 2 hours (overnight is OK).  Combine all ingredients in a crockpot.  Cook on low heat for about 10 hours or high heat for about 5 to 6 hours; either way until peas have almost disintegrated.  If you don’t have a crockpot, add all ingredients to a Dutch oven or large pot & cook on low or very how heat 4 to 6 hours or until peas are mushy. 

You may find that you need to add more water or if you like, chicken broth.  I recommend “salting to taste” only because you won’t know how salty the ham bone is until after it is finished cooking.

Makes about 8 to 10 servings.  Serve with croutons.  Enjoy!
